ブドウは除梗して約8時間、12～14℃にてマセレーションと破砕を行います。ソフトプレスの後、モストはデカンタージュにより清澄されます。18-19℃に温度管理されたステンレスタンクで10日間発酵、そのままシュールリーで約6ヶ月間熟成します。最低2ヶ月間瓶熟成。
